I’ve said it before and no doubt will say it again: I love living as an expat. Last week, I went to a French cooking class. It was taught by an Australian and my fellow student cooks were Czech, Colombian, Italian and American. Helen was our instructor and she had all the ingredients and recipes ready to go for us at her place, so we broke into teams to make the different courses of the meal. Together, we concocted and ate Crepe de ble noir (Breton buckwheat pancakes with a mushroom filling), Toulousse-style cassoulet with white beans and sausage, coq au vin served with creamy, cheesey mashed potato and pear and rocket salad with Roquefort and walnuts. And for dessert, we had apple tarte tatin with calvados carmel syrup. Yes, it was all pretty amazing. My mouth is watering just at the memory of it all.

The cassoulet. We tested the slow-cooked Julia Child versus the quick Jamie Oliver recipe and found that Jamie's version was actually pretty good.

It’s good to know that Jamie’s cassoulet is ok, because my mother did his 30 min cauliflower with pasta dish the other week and it was disgusting!

Of course, it could have been her fault…

Hi Jane,
Thanks for the laugh, once again. As for the cassoulet, it did not have the same depth of flavor as Julia’s, but we all agreed that it really was good.
