With the onset of the dark here, I have spent an inordinate amount of time thinking about food of all sorts. (Read some of my recent posts to see how true this current obsession is.) Knäckebröd – literally a crisp, dry hard bread – is a very traditional Swedish bread that I’ve heard was even carried around by the Vikings on their raids. Whether that’s true I don’t know, but knäckebröd does date back hundreds of years and is still popular today as it stays crispy and edible for a long time. And like so many things here, there is a special holiday version of knäckebröd that comes out and is particularly a favorite to be served up with Chrismtas ham, among other things.
I am a big fan of the knäckebröd – particularly some of the fresh, tasty ones that restaurants such as Sturehof carry. And the store-bought version called Vilma’s in the sesame flavor is one of the Swedish staples that is always in my pantry.

Same stuff. Just not quite as good in my humble opinion!
My favorite is Vika. Much better than Wasa (never buy that) and even better than Mora or Leksandsknäcke, (and more expensive). But still a “regular” knäckebröd to eat for brakfast or just when you’re feeling a bit hungry. Vilmas is more of a snack, to serve with a fancy dinner, in my opinion, and not ordinary knäckebröd or something I would eat for breakfast. Try crumbling some Vika in some filmjölk, with sylt, mmm. I do keep Vilmas at home too. And always Vika!
